Hello and happy February 2017!! I almost keep forgetting it's 2017, I have to keep reminding myself on everything. I don't know about you but I have made a few changes for the new year. Along with trying not to eat as much bread ha ha I'm in the process of transitioning my blog " Somewhere in the Mountains " over to a more digital diary feel. I wanted my blogs to be a little more personable and easier to access. My original idea when I started to blog was to have categories and each time I wrote something I would just put it into it's proper category. A lot of bloggers will buy a domain and this and that which is awesome and one day I hope to have just as much success but right now I want to start of simple and have a good standing before I go and pay for a website. I chose to do this myself and although it has been very hard and frustrating at times I'm glad that it's all falling into place. My new digital diary " Hey There Blondie" will be launching tomorrow and I'm so excited to share it with you! You can expect a Skin&Beauty page with all my favorite organic products, a Style&Vibe page linked to my Pinterest and any cool finds along the way will be added to that page directly. My home page will act as my actual blog and I will share anything and everything random with you from travels to awesome vegan recipes. I have also linked Somewhere in the mountains to Hey There Blondie. There are just too many good reads to go back on and this is my motivation to keep pushing forward. I have had more views on my blog pages than I ever imagined to have and I just hope you all follow my journey through 2017 and can find inspiration in the things I post. I don't know about you but while i'm on this planet I want to be healthy in mind, body, and soul. I want to travel, learn new things and really take care of myself. I hope everyone is having a good first month to the new year and THANK YOU so much for following and growing with me :)

Best Peanut Butter Cookies Ever
Good morning world, I hope everyone had an amazing Christmas and tons of delicious sweets to enjoy!! I know I did. I ended up making this random marshmallow graham cracker cake and peanut butter cookies. I would love to share the cake recipe but I never wrote it down so I will have to make it again and hope it turns out great. Now if your looking for something quick and easy to make I would recommend these peanut butter cookies! 20 min to make no chill time required :)... AND they're dairy free :)
All YOU NEED IS :
1 2/3 cup organic all purpose four
1/2 teaspoon Himalayan Salt
1 teaspoon Baking Soda
1/3 cup Coconut Oil
1/3 cup Turbinado Sugar
1/3 cup Coconut Sugar
3/4 cup fresh ground Peanut Butter ( I use 100% organic)
1/3 cup non-dairy milk ( I used Almond Milk)
1 teaspoon Vanilla Extract

All YOU NEED IS :

1/3 cup Turbinado Sugar
1/3 cup Coconut Sugar
3/4 cup fresh ground Peanut Butter ( I use 100% organic)
1/3 cup non-dairy milk ( I used Almond Milk)
1 teaspoon Vanilla Extract
- Preheat oven to 350.
- Mix all ingredients, order doesn't really matter as long as it all gets put into the bowl :)
- After stirring the dough should be soft and easy to stick to it's self. If dough is dry add more milk but only a teaspoon or two more.
- Depending on how little or big you want your cookies, place evenly on baking sheet. (don't forget to grease baking sheet) I use coconut oil.
- Using a fork cross hatch each cookie and top with more turbinado sugar.
- Bake for 10 min ONLY.. if you feel your cookies are bigger and need more time add a minute or two. I promise no matter what these cookies should need no longer than 13 min to bake.
- Serve with glass of almond milk and enjoy :)

The Power of Energy
Have you ever
wondered if the energy you put out is what you get back, or that you could have
complete control of how your life goes? It wasn’t until about four years ago
when I watched the Netflix
documentary " The Secret" that I even
considered this could be true. Where I am today is exactly where I
want to be and I couldn’t be more proud of myself for getting there. For months and months and still to this day I put energy out about my modeling and life in general. Where I want it to go, where I see myself, and of course you must put action into these thoughts or the universe will not know what you want. Since experimenting with this theory I have had photographers from all over contact me and I've also had the amazing opportunity to be in a runway show for RAW, Natural Born Artists in Denver!!! The show turned out amazing and I was able to fit a photo shoot in early that morning. The lack of sleep the last few days is real but I wouldn’t change it for a thing, this whole day was a blessing and I met the most amazing people. I hope to return to RAW next year and I will continue to put out good vibes in everything I do. Instead of concentrating on the things you don’t want start with what you do. That point when you get frustrated and think " now this is just dumb there is no way" push past that thought and I promise you good things will come. Enjoy the rest of 2016 and thank you for reading :)

RAW ~ natural born artists
It's that time of year again and Christmas is just around the corner. With holiday shopping coming to a slow, the middle of the month is the perfect time to take a break from this seasons stress and get ready for the new year. I don't know about you but I love live music, jewelry,art,fashion, and
just about anything that sparks my inspiration. Recently I've been asked to walk in a runway show for Orange Poppy Salon http://www.orangepoppyspa.com/ under the RAW Denver showcase. The show is the 15th of this month and I couldn't feel more blessed and excited to be apart of it. RAW showcases talent in photography, visual art, film, fashion design, music, and hair & makeup artistry. https://www.rawartists.org/denver Currently operating in over 60 cities across United States, Australia, Canada and the UK one of this years 2016 RAW shows will be held in Denver Colorado. This event is an independent arts organization created by artists for artists. Come help support our local talent by coming down to City Hall the 15th to celebrate HOLIDAY RAWK 2016. Boettcher Mansion
After a week back home visiting in Wisconsin I am excited to be back in the mountains again! The flight back from Minneapolis to Denver isn't bad at all, and once your in
Denver there is so much to do. If you find yourself traveling west on I 70 you will come across signs pointing to " Look out Mountain and Boettcher Mansion" you must follow these signs!http://jeffco.us/boettcher-mansion/ The view alone is amazing but for me Boettcher Mansion steals the show. Designed as a summer home for entrepreneur Charles Boettcher in 1917 this home sits on 110 acres of pure beauty, and is a must see destination when traveling through Colorado. Given to the County of Jefferson in 1972 the mansion is now open to the public and visited by more than 30,00 tourists each year. My favorite part about this place is it's open to special events such as weddings, memorials, and dinners. Boettcher Mansion is open weekdays only from 8AM-4PM, no entrance fees and it's a self guided tour. You can take as little or as much time in each room as you like, and for those of you who like history and nature this is the perfect place. Home, A Land Far Away
The time has come to go home again. I try to make it at least twice a year, all of my good friends live in a land far away called Tomahawk Wisconisn. All thought it will be a huge temperature change for me I am beyond excited to see everyone! Growing up in a town with less than 4000 people you get what you get. I wouldn't change it for anything because of all the billions of people there are in the world I get to call you guys my friends. Everyone experiences gains and losses when it comes to having friends. It is not about how long you have known someone it is about who stands by your side through thick and thin. I am so blessed to have so many good friends. Even though you guys are so far away, every time I see you it's like no time has gone by at all. I took about an hour this morning going through old pictures and there are 1000s!! These are a few of my favorites..Tomahawk I'm coming for you, peeps be ready! P.S I LOVE YOU ALL !!
